6 Ingredient Flourless Chickpea Cookies
6 Ingredient, Secretly Healthy, Flourless Chickpea Cookies
(gluten-free, dairy-free)
I had some friends taste-test these cookies with me and none of us could taste the chickpeas! In all honesty they taste more like a peanut butter granola bar and are delicious hot or at room temperature. Think of them as a snack with a nice balance of carbs, protein and healthy fat. I actually ate two of the before the gym the other day and felt no guilt whatsoever ;)
Ingredients:
1 can of chickpeas, rinsed and drained
1/2 heaping cup of creamy sunflower butter
1/4 cup maple syrup/agave blend (Trader Joes)
1/4 cup chocolate chips
1/4 cup sunflower seeds
2 tsp vanilla extract
1 tsp baking powder
Feel free to experiment with different nut/seed butters or use creamy or crunchy.
Directions:
In a food processor, blend everything but the chocolate chips and sunflower seeds until well combined.
Add the chips and seeds and fold in by hand or pulse briefly.
Line baking sheet with parchment paper
Form into 12 cookies (roughly 2”x2”)
Press down with fork
Top with sea salt
Bake at 350º for 10 minutes
Store in an airtight container on the counter or in the fridge.
