Easy Butternut Squash Soup
If you read my post on MSG, you know that it is often found in canned soup. Monosodium Glutamate is a controversial additive used to enhance the taste of processed foods. The better alternative - this incredibly easy homemade butternut squash soup:
Ingredients:
1 butternut squash
32 oz (1 quart) low sodium veggie broth
1 cup milk of choice
1 TBSP Maple syrup
Scallions/shallots/onion
Minced garlic
Cumin
Nutmeg
Cinnamon
Hot sauce
S&P
Instructions:
Toss squash and broth into a blender and blend until smooth. Add all ingredients to a large pot to heat. THAT’S IT!
Notes: I loosely followed a recipe found on the web and made it my own by using ingredients I already had in the kitchen. I used a 1/2 can of coconut milk to use up leftovers but feel free to sub for regular or almond milk. Butternut squash can be a pain to deal with so I bought it precut. Don’t have squash? Use sweet potatoes! I didn’t have shallots so I used scallions.
