Golden Milk Chia Pudding

Although most of us have a lot more time on our hands these days #covid19, this recipe is great to keep in your back pocket for when things return to normal and you want to get a head start on busy mornings. It takes a maximum of five minutes to throw together, including the time it takes to dig out the chia seeds from the back of your pantry, and only contains six ingredients, including the spices. It’s best to prep this pudding at night to have breakfast ready to go for the next four days! The best way to break your fast is with a fresh, wholesome meal, free of refined grains and sugars such as this pudding or overnight oats.

Chia pudding is low-carb and high in fiber and Omega-3 fatty acids thanks to all the chia seeds! The addition of turmeric (where the phrase golden comes from) adds a host of other beneficial properties including antioxidants and a natural anti-inflammatory compound.

Please note, herbs, spices, produce, whole grains, etc all have individual health claims when consumed, including improved brain function, decreased risk of heart disease, cancer or depression, etc. The fact is, the better your diet (roughly 80% clean, 20% lenient) the better off you are in general.

Overnight Golden Milk Chia Pudding

Free of gluten, dairy, refined grains, refined sugar

  • Prep time: 2 minutes

  • Total time: Refrigerate overnight

Servings: 4

Ingredients:

  • 1 - 15oz can of coconut milk

  • 5 tbsp chia seeds

  • 1 tbsp pure maple syrup

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/2 tsp turmeric + dash of pepper, optional for making milk golden

Instructions:

  1. Mix all ingredients in a blender

  2. Transfer to an airtight container and refrigerate for at least two hours before serving. Best if left overnight.

Serve with any of the following:

  • One serving of your favorite fruit: 1 banana or apple, 1/2 cup berries, etc

  • Nuts or nut butter

  • Seeds: pumpkin, sunflower

  • Coconut flakes
