Chicken & Wild Rice Soup
Chicken and Wild Rice Soup
(Gluten-free, dairy-free)
Serves 5-6
Ingredients:
Mirepoix (celery, carrots, onion)
2 quarts low sodium broth (chicken/veggie)
1 cup wild rice, uncooked
2 cans chicken
Garlic
Parsley
Thyme
Pepper
Instructions:
In a large pot, cook Mirepoix (celery, carrots, onion) in oil, ~10 minutes. Time will depend on fresh vs frozen veggies.
Add 1 cup of uncooked wild rice and 2 quarts of broth. Simmer for 25 minutes.
Add 2 cans of chicken + garlic, parsley, thyme and pepper to taste. Cook an additional 10 minutes.
Serve with hot sauce or sliced avocado and a glass of wine!
Notes:
For the Mirepoix, I precut and froze a bag of carrots, a bag of celery and about half an onion a few weeks ago before I went out of town so they wouldn't go bad (see image below). My cans of chicken were 12.5 oz each, set in water.
Substitutions:
Feel feel to use brown rice, beans or whole wheat pasta instead of wild rice
Vegetarian option - swap chicken and rice for lentils or chickpea pasta to keep the protein, fiber and carbs
