All Things Avocado

Facts:

Avocados, we know they cost extra but they're well worth it! Although high in calories, they're loaded with potassium, healthy fats, fiber and antioxidants. It's not the whole foods you should be afraid of, it's the sugary, artificial, processed foods. 

Avocados are delicious but they brown quickly due to oxidation when exposed to air, leaving them less than appealing. 

Outsmart Oxidation:

1) Cut out the amount you want: I buy small ones and typically eat half: Cut in half & eat the half WITHOUT the pit

2) Use the empty skin to re-cover the uneaten half

3) Wrap with plastic wrap and store in the refrigerator for 2-3 days. 

Or why not eat the whole thing?!

FYI:

Avocados stop ripening once refrigerated so leave them on the counter until ripe/soft. They will then last roughly 2 weeks in perfect, edible condition, based on my findings :) 

Avocado Toast (assemble in order listed):

  • Sprouted or whole wheat bread

  • Mashed avocado

  • Sea salt

  • Trader Joe's Chili Lime Seasoning, optional but highly recommended

  • Grilled mixed veggies: onion, peppers, tomato

  • Fried/over easy egg

  • Hot sauce, optional

DIY Guacamole:

  • Avocado, mashed

  • Onion, diced

  • Tomato, diced

  • Fresh lime, juiced

  • Sea salt

  • Garlic, hot sauce, jalapeno, cayenne pepper; optional

  • Cilantro

  • Trader Joe's Chili Lime Seasoning, optional but highly recommended

All ingredients should be added to taste. I prefer mine fairly limey. Serve with tortilla chips, veggie sticks, tacos or burgers.
